Spring has very nearly sprung! Soon, the weather will be warm enough for you and your friends, or a special significant someone to plan a picnic. Knowing full well that a healthy diet encourages a healthy body, and a healthy body promotes a happy, healthy mind, the more nutritious you make your picnic items, the better.
Here, you will be able to check out some spring recipes for senior picnic outings. The goal is for everything you bring to be not only delicious but nutritious.
Additionally, getting out and walking around a bit, breathing in some fresh air, and changing what you look at every day will be an invigorating experience. So get that picnic basket ready, grab your shopping list, and check out some suggestions as to what to put together and pack for this year’s first spring outing.
Pasta Salad
With some avocado sauce, this cherry tomato pasta will be the perfect dish to bring on your spring picnic. This recipe makes approximately 10 servings and takes about 30 minutes to prepare. Here’s what you’ll need:
- 1/2 cup of pine nuts
- 1 cup of halved cherry tomatoes
- 1/3 cup olive oil
- 1/4 teaspoon of ground pepper
- Half teaspoon salt
- 2 tablespoons lime juice
- 2 halved garlic cloves
- 1/4 cup basil leaves, loosely packed
- 1 cup spinach (fresh)
- 2 medium pitted and peeled ripe avocados
- One package protein-enriched rotini (uncooked this equals about 3 1/2 cups)
- Optional: grated lime zest, shredded mozzarella cheese, shredded Parmesan cheese
After the rotini has cooked, drain it thoroughly. In a food processor, chop/pulse the salt, pepper, lime juice, garlic, basil, spinach, and avocados. Steadily add a stream of the oil while mixing.
Add the tomatoes and avocado mixture to the rotini after draining and toss it. As desired, add toppings.
Potato Salad
This is a vegan potato salad with the decadent name of “Green Goddess”. This recipe makes about eight servings and should take approximately 30 minutes to prepare, plus time to refrigerate it. Here’s what you’ll need:
- Sliced radishes
- One finely chopped celery rib
- 1 teaspoon seasoned salt
- 2 teaspoons drained capers
- 3 tarragon sprigs (remove the stems)
- 1/2 cup mayonnaise (vegan)
- 1/2 cup fresh parsley sprigs (remove the stems)
- 2 medium pitted and peeled ripe avocados
- 4 green onions
- 2 pounds of halved baby red potatoes
Boil the potatoes until tender. While they’re boiling, chop green onions, then put them in a blender. Into the blender, add green portions (seasoned salt, capers, tarragon, mayonnaise, parsley, and tomatoes as well) and process thoroughly. Put the drained potatoes in a large bowl and add the green onions, celery, and dressing. Refrigerate after tossing. Top with parsley and radishes.
